Aspergillus oryzae's protease activity zeroes in on the proline-rich 33-mer of gliadin, a notably immunotoxic peptide derived from gluten. The proline-rich proteins in gluten, known for triggering inflammatory responses in individuals with celiac disease or gluten sensitivity, can still induce reactions even in those following a gluten-free diet due to inadvertent gluten exposure. Supplementation with protease from Aspergillus oryzae has also been associated with an increased abundance of beneficial bacteria, specifically Bifidobacterium and Lactobacillus, in experimental models, hinting at a potential probiotic effect.
